I've been trying really hard to be more mindful of my diet lately. That means eating clean- less processed food, cutting out dairy and grains, eating more fruits and vegetables and cutting back on sugar.
Here's what a typical breakfast, lunch and dinner might look for me...
I start out the day with some sort of egg preparation...whether it's scrambled eggs with sweet potato and spinach or these delicious protein pancakes. It's super easy...simply mash one banana {I blend mine in a mini food processor}, whisk in 2 eggs and add a dash of cinnamon and nutmeg.
I also have a double latte with unsweetened vanilla cashew milk.
I'm not really eating cheese right now, but life is all about balance and goat cheese is one of the healthier options. This salad is a combination of spinach, raspberries, blueberries, walnuts and goat cheese. I drizzled a little honey to help emulsify the flavors and create a little dressing. Delish! I might also make these chicken lettuce wraps or a kale salad.
For a snack, I might have an apple with almond butter, a handful of almonds, or a Larabar.
For dinner, I look to only eat some sort of meat and a veggie. I normally never eat this much meat, so it's been a little bit of a challenge, but hopefully the picture above demonstrates how to get creative. I've recently become slightly obsessed with green string beans, zucchini, and cauliflower. I'll usually switch off between having chicken or some sort of red meat, like flank steak or filet.
And on occasion...I'll have a little treat, like a Justin's dark chocolate peanut butter cup.
Of course, I drink plenty of water throughout the day which is essential.
And let's not lie, I still enjoy a glass of red wine {or two!} on the weekends. But I have cut back quite a bit...baby steps!
Eating this way the last several weeks has really taught me a lot about finding balance and portion control. It's also helped us meal plan throughout the week, which is HUGE accomplishment for us. And my husband definitely is not complaining about all the extra meat we've bean eating lately! ;)
I really do find that I have more energy and I don't crave the sweets and carbs like I used to.

ReplyDeleteI have ups and downs. Sometimes I find myself constantly snacking and others I'm happy with three sensible meals. I don't think I could give up my carbs though! But your meals really do look yummy :)

Everything looks so delicious! My husband and I started the Fast Metabolism Diet (lots of fruit, veggies, whole grains, and meat) a few weeks ago to reset our metabolism and get started on cleaner eating..we have two weeks left and we already notice a huge difference in our energy levels and have both lost weight. When we're done with this I plan on clean eating most of the time with a few treats every now and then. I can't wait to try those pancakes and that salad. Yum!!
ReplyDeleteI find myself getting so hungry during the day...how many snacks do you eat? I did a detox last year of no dairy, gluten, sugar or soy and felt GREAT, but I was constantly snacking (or drinking protein shakes).

ReplyDeleteThis sounds a lot like the changes I've made to my diet! Nothing drastic, but I feel so much better without all of the carbs and sweets. I haven't cut back a whole lot on cheese, kudos to you for going that far! I'm definitely enjoying meal planning more now too. I don't know why I waited so long to get better at all of this!
ReplyDeleteSince going GF in August for health reasons, we too have been eating healthier and cleaner. And, it has made all the difference in the world! First holiday season I actually lost weight rather than gained!!!

ReplyDeleteSo I am really trying to cut out the baked goods. It's so tough...but I feel so much better when I do and it's helping me lose weight...stay a little bit in shape! Sigh.

I've lost 5.5 pounds since the new year. I have been trying to be more mindful of what I eat as well. I'm trying not to snack and not eat after 6:30. I do indulge in some cheese on my salads for lunch and with an iced coffee each morning. Good Job!

ReplyDeleteYUM! All of this looks wonderful..I really need to try those banana pancakes! I did a 2 week sugar cleanse last year and it really help cut my cravings. Now it takes so much less to satisfy my sweet tooth!

ReplyDeleteThese meals look delicious :) Jurgen and I went Paleo for a month last year and the beginning was brutal for me. Since I'm a natural carboholic I had terrible migraines the whole first week and felt super weak and shakey at the gym. But after I got through the first week my energy levels rose and started feeling much better. I just wish we could get back into it. I think it's a little more difficult in South Africa because we struggle to find Paleo friendly options like almost butter and coconut oil. But I shouldn't use that as an excuse... I'm just dreading week number one again!
ReplyDeleteWe have cut out carbs from dinner too but I can't say the same for lunch. :/ baby steps! also dessert is the devil. i can not stay away from it! i guess since i know that about myself i should buy some healthier dark chocolate and allow myself one piece a night. killer. i really want to try those pancakes...looks delish!
