And by heart, I meant I am obsessed!
I have no idea where the obsession came from. I used to think of sweet potatoes as those weird things we ate a Thanksgiving time {sweet potatoes are really yams...those orange things}. And then there were sweet potato fries, which are always delicious. But that was about the extent of my sweet potato vocabulary.
And then I had a baby and sweet potato was easy to prepare. And REALLY good!
Now I have to have it with and in everything.

mmm.. we love sweet potatoes too! And those sweet potato happy baby puffs are probably the best ones they carry! Don't leave out sweet potato black bean enchiladas!!

Have you made the Smitten Kitchen Recipe with the sweet potato rounds that have a dried cranberry, celery, goat cheese relish?? They are amazing you would love them!

Hi Julie! We diced them up and let them sit a little to dry them out (like 20 minutes) and then toss them lightly in olive oil, salt and pepper. We add chopped onion as well. SO good! And so easy!

ReplyDeleteI roast my sweet potatoes with beets, carrots and turnips in olive oil and add pumpkin seeds or sunflower seeds on top before I devour it. Or I'll roast them with apples mixed in a little coconut oil and sprinkle cinnamon on top. Yum!!

ReplyDeleteI love them too! Too bad my fiancé does not. He doesn't like the sweetness I guess. I think they are delish, and I don't feel guilty for eating one as opposed to a regular loaded baked potato

ReplyDeleteI have a love of sweet potatoes too. This is always my "go-to" recipe when I don't know what to cook because I usually have all of these on hand (and if not I just wing it). Plus, you can make a huge batch and have easy left overs too!

Love those things called sweet potatoes. I like to roast them in the oven with a little sea salt and cinnamon and the next day throw the leftovers in a salad... so yummy. And to think I never eat them at thanksgiving!
ReplyDeletewe make sliders with sweet potato "buns". roast half inch slices of sweet potato and use as the bun with sliders. also, if you ever make quesadillas, meat or veggies, add chunks of cooked sweet potato to them.... it's wonderful. so, the answer is, yes... ilove them as much as you do!

ReplyDeletewe are OBSESSED with obsessed with sweet potatoes.. if you slice them thinly- add a little grape seed oil, cinnamon and sea salt.. wrap it in foil, throw it on the grill.. its delicious!
