Roasted Brussel Sprouts



After a couple missteps, I feel like we have finally mastered the brussel sprout.  I'll admit, I never ever thought I would like these little cabbages.  And my husband pretty much loathes them as well.  But I kept seeing appetizing pictures crop up on Pinterest, so I was inspired to try them again.

Our first batch was not so good...we didn't roast them long enough and they turned out dense and slightly soggy.  Not appetizing in the least.  We found the key is to dress them in olive oil and sprinkle with salt and pepper and then roast the crap out of them in an oven at 400 degrees for 30-45 minutes.  They should be charred and crispy.  Like, really crispy.  That's the key.

From there, you can choose a variety of different ways to dress them. Add in some cloves of garlic, throw in a dash of balsamic vinegar, or sprinkle in some pine nuts.  The options are endless.

  1. I used to love them. But the last 2 times I ate them they made me feel sick. So i'm leaving those little suckers alone for now ;)

  2. How about stir frying them with small pieces of bacon. I personally loathe them but I think that's because of many years eating them when I was a child the "normal" way.

  3. Try adding shallots and bacon or pancetta to your roasting pan. I've also done a balsamic glaze with cranberries. Yum!

  5. love brussel sprouts but have never roasted them! we are just boring and do EVOO, spray butter, salt and pepper and pop in micro ;) will try this soon!!

  6. I have finally come to appreciate the brussel sprout. I really like to saute them with bacon bits, apple cider vinegar and a little bit of dijon mustard. Seriously so good!

  7. I have tried brussel sprouts a few times (even fried!) and haven't found a way that I like them...but I want to so badly!! Maybe this will be the secret recipe ;) I am definitely trying it. Thank you!

  8. This is how we usually make them, I like them really crispy too! Oh, and I usually use garlic salt...so yummy! We had them last night actually! :)

  9. I just started eating brussel sprouts 2 years ago. We usually sautee them with olive oil and s&p until carmelized, but I really want to try your roasting technique next time. For me, the crunchier and less brussel sprout-tasting, the better.

  10. This is my favorite way to prepare brussels - so delish. I swear they taste like candy if they are charred on the outside...yummmm!! Lately, I've been adding roasted carrots and potatoes over quinoa for a quick, healthy meal! Xo

  12. I'm a huge brussel sproust fan....I usually roast them with a little olive oil, salt, pepper and after I usually top them with a little balsamic and shaved parm. YUM.

  13. I actually love Brussel sprouts! Thankfully, so does my husband. Ha ha ha. We love roadting them, but sometimes we also pan sear them as well. The key again is to get a nice char!!

  14. I love brussels spouts. My husband...not so much until recently. I prepared them the same way as you did and roasted them until they were very, very crispy and he thought they were quite good. I even tried sprinkling a tiny bit of parmesan cheese at the tail end of roasting and they were yummy.

  17. My parents have a photo of me at 4 years old, throwing an absolute tantrum because I did not want to eat my brussel sprouts. Now, I absolutely love them...as long as done right. These look absolutely perfect :) XO Brynn

  20. I cook mine with Brie and bacon! You guys should definitely try it - bacon makes EVERYTHING better...so does brie for that matter ;)

  22. I have never actually had brussel sprouts! Or at least not that I can remember. I'm not sure that my hubby would even be willing to try them, but this recipe makes them sound really delicious!!

  23. I love brussel sprouts! I normally steam them in the microwave for about 8 minutes or until they are done. Then in a pan, I put in EVOO, the brussel sprouts and chopped up bacon and cook until brown. Then I add parmesan cheese on top. Yum!
