With Mother's Day being this past weekend...and the usual brunch that accompanies that particular holiday, it got me craving quiche. {And if I'm being really honest...it doesn't take much anymore to get my cravings going!} Anyway...I have always loved quiche, but have never attempted to make it myself. I was surprised with how easy it is...and also with how many different ways you can make it.
I love goat cheese and spinach...and heirloom tomatoes. So I thought...why not try it all together? It was super tasty!
I used a store-bought pie crust and added all the fillings. The goat cheese and tomatos did create a lot of moisture, so I might use a firmer goat cheese next time, but it did not compromise the taste one bit.
Ingredients
- Store bought pie crust
- Goat Cheese, about a cup. I bought a log of goat cheese.
- Half of a white onion, thinly sliced
- 1 clove of garlic, minced
- 1 cup of fresh spinach
- 1 heirloom tomato, sliced
- 4 eggs
- 1 cup of milk
- Salt and pepper to taste
Preheat the oven to 375. Add about half of the goat cheese to the bottom of the pie crust. Sauté the onions over medium-low heat with some olive oil, until translucent. Add the garlic and sauté for another minute. Add the spinach until wilted. Pour that onion/garlic/spinach mixture over the goat cheese. Add sliced tomatoes on top. In a separate bowl, beat the eggs and milk together. Salt and pepper to taste. Pour the egg mixture over the top of the pie. Add remaining cheese to the top. Bake for about 45 minutes or until the center comes out clean.
I served mine with some fruit salad...it was delish!!
