Key lime pie is one of my favorite desserts! I love how tart and fresh they are...perfect for an early spring treat. My husband surprised me with these on Valentine's Day and I was definitely in love.
Recipe {Our Best Bites}:
- 10 mini graham cracker crusts* (available near the regular graham cracker crusts in the baking aisles)
- 5 egg yolks
- 1 14-oz. can sweetened condensed milk
- Around 1/2 c. lime juice. Fresh key lime juice is best, then regular lime juice, then bottled key lime juice. Fresh limes are key.
- 2 drops green food coloring (optional...we made these without the second time and they looked just as good}
We also topped ours with homemade whip cream. I'm sure Cool Whip or similar works just as well.
I think a little lime zest on top would make the perfect topper...especially if you don't dye the filling. These refreshing and zesty...and they're the perfect serving size.
