I made these cookies last year for a cookie exchange and everyone loved them! They kind of look like Grinch cookies...but let me assure you, they are anything but cranky! They have just a hint of peppermint and they're super soft and chewy...yum!

I made them again this year and they disappeared just as quickly! I think these will become a annual recipe for us! :)
