Black Bean & Spinach Enchiladas

First, I have to thank all of you for the awesome comments regarding our new bar cart yesterday!  You are all too sweet and I really felt like a fancy lady!  I think the cart definitely adds an air of sophistication, don't you??  :)

Anywho...last Friday night, Ryan and I were in a festive mood.  Warm enchiladas seemed like the perfect treat for the cooler weather.  Lucky for us, Laura from The Cooking Photographer had a great recipe for us to try!


These were deeeelicious!  And healthy too!  Can't beat that!

I loved the combination of black beans and spinach {we might add mushrooms next time too!}.  The green chiles and pepper jack added a nice kick.  Ole!

    Mmmmm I'm obsessed with Black Beans! Now I'll have to incorporate this recipe to mix things up!! You can never go wrong with any type of enchiladas. These look amazing! And I'll put mushrooms in too - that sounds like a great addition!

    Now this looks oh so yummy! I love Mexican food in general, am a huge fan of spinach and you can never go wrong with cheese, so, this is a must on my "to make" list! Yum!

    Mmmmmm, the enchiladas look yummy! I'm more of a fajita girl, but I may have to try these :-) I made fish tacos a couple of weeks ago for the first time, and they were pretty good. Really, you can't go wrong with any combination of tasty ingredients wrapped up in a tortilla :-)
