It's Tuesday again...and you know what that means...it's time for some Tasty Tuesdays!
Today, I'm featuring a yummy recipe I saw recently over at Lindsay's delightful blog!
Yes, they're the all elusive, zucchini fries!
And I use the word "fries" figuratively, because these are actually baked and they are de-lish! Crispy on the outside and warm and soft on the inside. They ain't got nothing on potatoes!
Zucchini Fries:
- 3 zucchini
- 1 egg white
- 1/4 cup of milk
- 1/2 cup of shredded Parmesan cheese.
- 1/2 cup of seasoned Italian breadcrumbs
Spray two cookie sheets with cooking spary. Slice up the zucchini into little french fry slices. Mix the milk and the egg white in a bowl. Mix the breadcrumbs and Parmesan cheese in a separate bowl. Dip each zucchini slice first into the milk/egg mixture then coat in the Parmesan/breadcrumb mixture. Bake at 420 degrees for 20 minutes.
They really are SO SO good! Perfect as a side or an appetizer!

I actually cut mine pieces into slices instead of fries because I found them to get crispier doing slices ...yum, my mouth is watering just thinking about them!

Zucchini, fried!! Yes please!!!! They almost looked like fried pickles, which i like as well. OK anything fried. This is a must try!
