Naan Bruschetta

What's the best part about having a neighbor who grows tomatoes?  Having him bring them up to Tahoe for us to enjoy!  And these are really good tomatoes!

I decided to make bruschetta, but with a twist.  I recently discovered naan...a sweet Indian bread that is similar to pita, but better, in my opinion!  I bought the pre-made kind, but brush some olive oil and salt on...throw it in the oven for 2-3 minutes and it is SO delicious!  And to sweeten the deal a little bit more, I added hummus...YUM!

Also, equally important to this recipe is really damn good olive oil...it's worth splurging on this item!  We happened to buy this over our anniversary weekend!  :)

Naan Bruschetta
  • 3 ripe tomatoes, roughly chopped
  • 4-5 cloves of garlic, mined
  • 10-12 large basil leaves, ribboned
  • Good Olive Oil, eye this part {about 1.5 tablespoons}, more for the bread
  • Balsamic Vinegar, eye this part {about 1 tablespoon}
  • Salt & Pepper to taste
  • Naan Bread
  • Hummus {I used traditional}
Combine the tomatoes, chopped garlic and basil in large mixing bowl.  Add olive oil and balsamic oil, salt & pepper...you need to do this to taste.   It should be a thick consistency...combine together until the flavors mix well.

Preheat the oven to 400 degrees.  Brush a small amount of olive oil and salt on the naan bread.  Heat it for 2-3 minutes in the oven.  Scoop hummus on top immediately after the bread comes out of the oven.  Use a slot spoon to add the bruschetta mixture on top.

Enjoy!  Bon Appetit!

  1. nice! we eat naan pizza at least once a week... sooo good and so easy. Usually saute some onion, garlic, then either zucchini, eggplant, or spinach (whatever we got) then top it on the naan, sprinkle some mozz and bake at 400 for 10min... we also will sometimes just use tomatos and slices of fresh mozz... def try it out!
