There is a restaurant called California Pizza Kitchen {CPK} that specializes in wonderful pizza combinations...one of which is the tostada pizza. I love this homemade version-though if you ever wanted to try the real thing, there are restaurants all over the country...even internationally now.
This pizza is unique in that it has a base of beans and melted cheese and it is then topped with fresh vegetables and crispy tortilla chips.
- Thin Crust Pizza (pre-made or handmade)
- Refried Black Beans (we get the non-fat kind)
- 1 cup Sharp Cheddar Cheese
- 1 cup Shredded Lettuce
- Ranch Dressing
- Pepper to taste
- 1/2 cup Diced Tomatoes
- Handful of Diced Cilantro-per taste
- Handful of Tortilla Strips (or Crumbled Tortilla Chips)
Clearly a lot of these measurements are "guesstimates" but bear with me. Take the refried black beans and spread an even coat on the pizza crust-about half a can. Bake in the oven (on the rack) for 5 minutes. Add the cheese and bake for an additional 5 minutes. Meanwhile, in a bowl, add ranch dressing to lettuce...enough to coat the lettuce and pepper to taste. Once the pizza is out of the oven, add the lettuce mixture, tomatoes, cilantro and tortilla strips to the top. You can also add sliced avocado, if you like.
